I would like to create a "Global Cookbook" with quick, traditional, easy, and inexpensive recipes that will enable us to share our special traditional sustaining dishes throughout the world. In Kenya Africa, when I visited last October 2009, I witnessed a cohesiveness within the families that was fostered by the traditions of the colorful indigenous tribes of the country. There was always a glorious ecstatic welcoming, complete with singing, dancing, jumping up and down in joy, hugs, kisses, clapping, children shrieking with happiness, and an occasional barking dog. The whole immediate “tribe” turns out and welcomes any opportunity for a celebration of life. Company is always “karibou asana” …..you are welcome very much. Eventually, if enough people contribute, I would like to publish a cookbook, with 100% of the proceeds going to women and children in Kenya to support their crafts that support their families. I am working closely with "The Daughters of Zion" and it has been my pleasure to bring these impoverished women knitting supplies and patterns to contribute to their self-help craft group's effort to create fair trade, and thus earn their own way with dignity, through their beautiful hand-crafts. If you have a traditional indigenous cultural dish or recipe… won’t you consider adding it to our collection of fine, tasty wonders, brimming full of years and years of nurturing love. The first recipe is the traditional Kenyan/Indian flat bread, Chapati. It’s a very good beginning! Won't you consider sending one of your favorite recipes? Include a photo if you can. By this gesture, you will be making a contribution to global awareness and interest, tolerance and celebration of the wondrous world we live in, while directly helping women and children to bring food to their own tables, giving them hope for another day. Chapati Flatbread..... This simple and easy flatbread is very delicious and is served traditionally with stews, rice, curry and other main dishes. Ingredients • 1 cup whole wheat flour • 1 cup all-purpose flour • 1 teaspoon salt • 2 tablespoons olive oil • 3/4 cup hot water or as needed Directions 1. In a large bowl, stir together the whole wheat flour, all-purpose flour and salt. Use a wooden spoon to stir in the olive oil and enough water to make a soft dough that is elastic but not sticky. Knead the dough on a lightly floured surface until it is smooth. Divide into 10 parts, or less if you want bigger breads. Roll each piece into a ball. Let rest for a few minutes. 2. Heat a skillet over medium heat until hot, and grease lightly. On a lightly floured surface, use a floured rolling pin to roll out the balls of dough until very thin like a tortilla. When the pan starts smoking, put a chapati on it. Cook until the underside has brown spots, about 30 seconds, then flip and cook on the other side. Continue with remaining dough. And there you have it… simple, easy and simply scrumptious!
